I’ve always cared about what makes food worth coming back to. Not just the first impression, but the second bite. The texture. The balance.
When I changed the way I was eating, I found options. But with dessert, too many fell short. Clean, but not decadent. Careful, but not indulgent. Fine, but not unforgettable. So I started making my own. Not because the world needed another “healthy” treat, but because I wanted something I would actually be proud to serve.
Madame Brûlé began with our Maple Tigernut cake. Tigernuts were my favorite childhood snack, so using them as the heart of a flavorful, allergy-friendly cake was the natural next step. Dessert should be rich, balanced, and satisfying. I didn’t see a reason to compromise.
That became our standard:
